Research found that the red colouring matter of beetroots contain anti-carcinogens and can increase the uptake of oxygen by as much as 400 percent. This helps us fight against cancer and increase our cardiovascular activities. Besides, beetroots are full of folate, iron, potassium and vitamin C. There are only 36 calories per 100g of beetroot, which make it a great choice if you are looking for food containing high fibre and low calories.
In Traditional Chinese Medicine, beetroots can nourish our blood. The carrots and sweet corm can cleanse internal heat and detoxify. This soup will strengthen all organs and help with difficult urination, it is ideal to drink during summer to maintain general wellbeing.

Ingredients (Serves 2):
1 whole raw beetroot
2 sweet corn
2 carrots
4 dried sweet dates (available from Asian grocery stores)
1 tablespoon of Goji berries/dried wolfberries (available from Asian grocery stores)
Method:
- Scrub the beetroots well and remove the green top and peel off the skin. Chop beetroot in dices. (Wear gloves if you don’t want the redness to stain on your fingers.)
- Chop carrots into dices.
- Wash sweet corn, dried dates and goji berries.
- Add beetroot, carrots, sweet corn, dates and goji berries and water to saucepan. Bring to boil, reduce to a simmer, cover and cook for 40 minutes or until soup is sweet.
- Serve warm.
Note: Try eating the leaves and stalk boiled with pork tenderloin or stir-fry. The taste is very similar to spinach and is also full of nutrition.
